Ingredients: -1 fryer (3-4 lbs), cut into 10 pieces -2 cups all-purpose flour -1 1/2 tablespoons paprika -1 tablespoon garlic powder -1 tablespoon onion powder -1 tablespoon black pepper -1 teaspoon dried thyme leaves -1/2 teaspoon cayenne pepper sauce -3/4 cup buttermilk or sour milk -6 tablespoons vegetable shortening or lard* -Hot water (as needed)

  • If you use buttermilk, omit salt from recipe. ** If you use lard, omit salt and butter from recipe.

Instructions:

1) Combine flour, paprika, garlic powder, onion powder, black pepper, thyme and cayenne pepper sauce in a large paper bag; shake well to mix. Add chicken pieces, one at a time, and shake well until coated.

2) In a separate shallow bowl or dish, combine buttermilk or sour milk and shortening or lard; whisk until smooth.

3) Place chicken pieces in hot shortening mixture; turn to coat thoroughly. Let stand for 15 minutes.

4) Pour about 1 inch of hot water into electric skillet; heat to 375 degrees F (190 degrees C). Add chicken pieces; cover skillet. Cook for 12 minutes or until golden brown and juices run clear when chicken is pierced with fork (if using a conventional skillet, cook over medium heat for 20 minutes). Turn chicken once during cooking time.
