Classic Fried Chicken

This is a classic recipe that never fails to disappoint. And it's surprisingly simple to make too!

Ingredients: 1 pound boneless, skinless chicken breasts 1 cup all-purpose flour 1 teaspoon paprika 1 teaspoon garlic powder 1 teaspoon salt 1/2 teaspoon black pepper 3 tablespoons vegetable oil 1/2 cup milk Directions:

  1. Preheat your oven to 400 degrees F. Cut the chicken breasts into small strips, then set aside in a bowl. In a shallow dish, whisk together the flour, paprika, garlic powder, salt and pepper. Dredge each chicken strip in the flour mixture until coated, then shake off any excess. 2. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken strips and cook for about 2 minutes per side until golden brown and cooked through. 3. Transfer the chicken strips to a baking dish and drizzle with the milk. Bake in the oven for 15-20 minutes until golden brown and crispy. Serve hot!

KFC-Style Fried Chicken This recipe is based on the fried chicken from everyone's favourite fast food chain—KFC! It's just as crispy and delicious as you'd expect. Ingredients: 4-6 boneless, skinless chicken breasts (about 2 pounds) 1 quart buttermilk 1/2 cup hot sauce (like Frank's RedHot) 1 tablespoon smoked paprika 2 teaspoons chili powder 2 teaspoons garlic powder 2 teaspoons onion powder 1 teaspoon salt 1/2 teaspoon black pepper 1 quart all-purpose flour 4 cups vegetable shortening or lard Directions: 1. Pour buttermilk into a large bowl or zip-top bag, then add the hot sauce, smoked paprika, chili powder, garlic powder, onion powder and salt and pepper. Stir or shake to combine well. Add the chicken breasts to the bowl or bag and coat evenly with marinade. Let sit for at least 30 minutes (or up to 12 hours). 2 . Pour flour into a large shallow dish or zip-top bag. Remove each piece of chicken from buttermilk mixture, letting any excess drip off, then dredge in flour until coated evenly. Shake off any excess flour and place on a wire rack set over a baking sheet (or back in the bowl/bag). 3 . Heat shortening or lard in a large skillet over medium-high heat until melted and shimmering (about 375 degrees F). Gently add some of the coated chicken pieces to the hot fat—be careful not to overcrowd them (you may need to do this in batches). Cook for about 5 minutes per side until deep golden brown and cooked through throughly. Drain cooked chicken on paper towels and repeat with remaining pieces of chicken. Serve hot! Keep an eye on your frying fat temperature as it may fluctuate depending on your stove top – if it drops below 350 degrees F., your chicken will start to absorb too much fat
